White chicken meat is a good source of the trace mineral selenium, which increases natural killer cells and mobilizes cancer-fighting cells. These delicious, spicy chicken tenders could become your new chicken soup!

Ingredients

1 cup organic, fat-free plain yogurt 1 tablespoon extra virgin olive oil
1 onion, finely chopped 1/2 teaspoon salt
4 cloves garlic, finely chopped 3/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper 1/4 teaspoon cinnamon
2 tablespoons lime juice 1 teaspoon paprika
1 tablespoon honey 1 1/2 pounds chicken tenders

Directions

In a large bowl, combine yogurt, onion, garlic, cayenne, lime juice, honey, oil, salt, cumin, paprika, and cinnamon. Add chicken and coat well. Cover and refrigerate for at least 30 minutes or up to 12 hours. Preheat oven to 375°F. Line a baking sheet with parchment paper, and place chicken tenders on top. Bake chicken until golden brown, about 12-15 minutes.
Makes 4 servings.
